Vineyard: ancient vineyards of “Cornacchino”, oldest vines, 60 years old
Vines: Cabernet Sauvigno 90%, Canaiolo 10%
Density: 4.000 vines per hectare.
Cultivation system: guyot with grassing and minimum tillage.
Soil: fresh and fertil soil with a little stones
Altitude: 210 m. over the sea level.
Microclimate: sub-mediterranean with quiet cold-rainy winter and dry-medium hot summer.
Production for hectare: 40 Hl.
Vinification: scrupoulos hand harvest in small boxes, fermentation and maceration on skins for 18 – 20 days with temperature controlled (26°C). Malolactic fermentation in tonneau (french wood cask of 5 hl.), aging for 12 months and stay 6 months in bottle.
Colour: intense ruby red.
Fragrance: complex, note of spicy and liquorice
Taste: powerful, excellent structure, good acidity.
Alcohol: 13,50% Vol.
Service temperature: 10-20° C
