Production area: land in the municipality of Poggibonsi (Siena)
Vineyard: our vineyards, the grapes are picked ripe and healthy.
Vines: Sangiovese 85%, Canaiolo 5%, Colorino 5%, Ciliegiolo 5%.
Density: 4.000 vines per hectare.
Cultivation system: Guyot and cordon with grassing.
Soil: alternating of fresh and fertile soils, composed of yellow sands of Pliocene.
Altitude: 210 m. over the sea level.
Microclimate: sub-Mediterranean climate, with average cold and rainy winter period and dry summer.
Wine production for hectare: 60 Hl.
Vinification: after careful and scrupulous hand harvesting, the grapes are put in tanks. Three weeks of maceration at controlled temperature,complete fermentation enhancing the aromas and flavors.
Colour: intense ruby red.
Smell: intensely vinous bouquet with hints of iris and violet.
Taste: harmonious, savory, dry, slightly tannic.
Alcohol: 13% Vol.
Service temperature: 18-20° C.
Combinations: all red meat dishes including the classic “fiorentina steak”served with beans or roasted potatoes , also white meat and spicy cheese.
