The evolution of the tradition the white wine Trebbiano grapes meet Chardonnay for a great result.
Wine: Indicazione Geografica Tipica (I.G.T)
Production area: land in the municipality of Poggibonsi (Siena).
Vineyard: historical Vineyards called “Poggio del Capannino” and “Scassino”
Vines: Trebbiano toscano 70%, Chardonnay 30%.
Density: 4.500 vines per hectare.
Cultivation system: Guyot with grassing.
Soil: fresh and fertil soil.
Altitude: 210 m. over the sea level.
Microclime: sub-mediterranean climate, with quiet cold-rainy winter and dry-medium hot summer.
Wine production for hectare: 60 Hl.
Vinification: Chardonnay grapes are hand- picked the first week of september. After the soft pressing, the liquid pass one day of cryomaceration (5°C) to preserve the aromas and flavors. The fermentation lasts one week (20°C).
Trebbiano grapes are hand-picked the third week of September and have the same process of chardonnay. After the fermentations, the wines are assembled, and mature in steel tanks for six months.
Colour: quite pale yellow.
Fragrance: intense, fruity, hints of citrus, floral (mimosa), herbaceous nuances.
Taste: dry, fresh, persistent and harmonious, with almond aftertaste.
Alcohol: 12,5% Vol.
Service temperature: 8-12° C.
Combinations: fresh cheese and vegetables, first courses with white sauces, every kind of fish, eggs and white meat. Perfect with appetizers.
